Grass-fed animals are more nutritious

A major benefit of raising animals on pasture is that their products are healthier for you. For example, compared with feedlot meat, meat from grass-fed beef, has less total fat, saturated fat, cholesterol, and calories. It also has more vitamin E, beta-carotene, vitamin C, and a number of health-promoting fats, including omega-3 fatty acids and “conjugated linoleic acid,” or CLA. Our animals have not been fed grain at any point and are truly grass-fed and finished!

Weights and Pricing

 

Pricing is determined by the "dressed weight" of the animal.

 

Dressed weight, also referred to as "hanging weight," signifies the carcass's weight after the removal of the head, blood, and offal following the animal's slaughter. This figure encompasses all the meat, fat, and bones from one side of the animal.

 

Once the animal is dressed, the butcher will then customize your "side" or "quarter" to your specific preferences. It's important to note that during the process of "dry aging," the meat may experience some weight loss as it safely undergoes aging, which contributes to its tenderness.

 

The choice of cut specifications also influences the final weight; for instance, boneless T-bone cuts will weigh less than bone-in ones. Dressed weight is considered the fairest and most accurate method for weighing an animal intended for processing.

 

On average, the "boxed weight," which is the final product you receive, can be approximately 20% to 30% less than the dressed weight.
