Grass-fed animals are more nutritious
A major benefit of raising animals on pasture is that their products are healthier for you. For example, compared with feedlot meat, meat from grass-fed beef, has less total fat, saturated fat, cholesterol, and calories. It also has more vitamin E, beta-carotene, vitamin C, and a number of health-promoting fats, including omega-3 fatty acids and “conjugated linoleic acid,” or CLA. Our animals have not been fed grain at any point and are truly grass-fed and finished!

Weights and Pricing
Pricing is determined by the "dressed weight" of the animal.
Dressed weight, also referred to as "hanging weight," signifies the carcase’s weight after the removal of the head, blood, and offal following the animal's slaughter. This figure encompasses all the meat, fat, and bones from one side of the animal.
Once the animal is dressed, the butcher will then customize your "side" or "quarter" to your specific preferences. It's important to note that during the process of "dry aging," the meat may experience some weight loss as it safely undergoes aging, which contributes to its tenderness.
The choice of cut specifications also influences the final weight; for instance, boneless T-bone cuts will weigh less than bone-in ones. Dressed weight is considered the fairest and most accurate method for weighing an animal intended for processing.
On average, the "boxed weight," which is the final product you receive, can be approximately 30% less than the dressed weight.

Dressed Weight VS Take Home Meat
We recommend you familiarize yourself with the following info and be sure to ask any questions you have before purchasing to avoid any confusion. Here is a breakdown.
Live Weight: Walking around weight of the live animal.
Dressed Weight: The weight of the carcass when it goes into the hanging room to dry age. Dressed weight does not include the head, hide, hooves, blood and innards, which have been removed. It DOES include bones, fat and sinew, much of which will be discarded during processing.
How many kg of meat will I get?
Your boxed meat will be less than the dressed carase weight 20-30% less on average that you are invoiced for. This is because you have paid to have it cut into individual cuts, bones removed, fat cut off etc this is industry standard worldwide. You only get boxed what is edible. You can select to keep the discarded bones if you wish.
